The town was founded in 1872 by John Sweet and his family as a cattle ranch on the east side of the San Antonio River. The town name comes from its location on Canisteo Creek south of present-day Sweetwater. A post office was established in 1874, and the first store was built in 1875. In 1897, sweet water became a city under an act of Congress passed to create cities within counties where no towns existed yet.
