Lockhart, Texas is a small town located in Hudspeth County, Texas. The population was 2,531 at the 2000 census. It is the county seat of Hudspeth County. The name Lockhart comes from James G. Lockhart who settled here in 1871 and founded the town on land he acquired from Rancho San Antonio de la Frontera. In 1879, he erected a log courthouse and jail which still stands today. The town developed around agricultural activities with some manufacturing also taking place during the early years of its development. With the arrival of automobiles in the mid-19th century, Lockhart experienced rapid growth with businesses opening up to serve drivers coming through the area for supplies or services. By 1910, there were ten businesses operating in Lockhart and it had become an important trade center for farmers and others in that area. The post office was established at Lockhart on November 15, 1881, and was renamed Battle Creek on December 1st of that year after Battle Creek Mission Road ran through it. By 1915, when it became part of Hudspeth County, seven business establishments had opened at Battle Creek with three becoming successful: A&P Grocery Store (1891), Lumberyard & Emporium (1892), and Wagon Wheel Inn (1893). One characteristic of local culture that has persisted until this day is what is called "the corn dog." This dish is made by frying kernels of corn over high heat until they are browned; then they are placed in a deep fryer set to medium-high heat until they crisp up like bacon bits; then they are removed from the fryer and served as part of their meal with ketchup or chili on them! The cotton gin industry also played a role early on in Lockhart's history with several factories being built to process cotton bolls into finished products such as ropes or hats.
