The history of Katy dates back to 1836 when settlers from Missouri first arrived in what is now Katy County, TX. The area was part of Mexican territory until it became American soil following the Mexican–American War. In 1845, Katy was chartered as an independent town by the General Land Office on behalf of Colonel John Boggs, who had come to own Rancho Santa Fe de Acuna (later known as Trinity County). By 1860, only 5 percent of its residents were Anglo-Saxon while almost all other residents were Hispanic or Latino - including many slaves who had been taken captive during Mexico's war for independence from Spain. In 1870, some local citizens successfully lobbied Congress to annex much of present-day Houston County (Houston had been annexed into Galveston County prior to that date) into Baylor University School District #2 - one which would later become founding member of Houston Independent School District #1 . In 1907, after years of growth due to oil exploration and production activities across much of North America – including smaller towns like Magnolia and Clearwater – downtown Katy overtook downtown Houston as the biggest center for commerce in East Texas . In 2000 Census figures released by the US Census Bureau , less than 1/5th (0.14%)of adults living in Katy identified themselves as "Hispanic or Latino", well below any major US metropolitan areas such as Los Angeles or New York City where over 60% identifying themselves that way according to census data published between 1990 and 2000

At first, the settlers only used the lick as a place to dry their food and build their cabin.
