Hereford, Texas is a small town located in Sherman County, Texas. The population was 2,804 at the 2010 census. It is part of the Amarillo–Bryan metropolitan area. The Hereford community began as a farming village in 1876 and grew to include a post office, school, grocery store and two churches. In 1907 the nearby town of Lamar was founded and soon became the largest town in Sherman County. The growth of Lamar led to competition between Hereford and Lamar for land and resources; eventually Hereford had to sell its water rights to Lamar for $1 per acre. In 1928 Hereford submitted an application for incorporation as a city; after much debate it was approved and incorporated as Hereford on December 12, 1928. Today, herefords are proud residents of their small town with unique architecture that reflects its history dating back more than 100 years. Hereford has seen many changes over the years including annexation by Amarillo in 1936, when Hereford's population topped 5,000 residents; later annexations by Bexar County (1957) and Haskell (1982) which increased its size to over 10,000 residents before declining again during the 1990s recession; most recently annexation by Sherman County in 2000 which increased its size yet again to over 20,000 residents today. Today’s economy depends heavily on agriculture although there are also some manufacturing operations present such as Weis-Gorman Meatpacking Co., Inc., makers of ground beef products from cattle raised on local family farms since 1917. The town was created from parts of the settlement of Bairdville and other outlying areas around Kerrville. The first building in town was a log cabin built by Jno Hennessey on what is now Main Street. A grocery store and school were also built early in the town's history. John Hennessey served as mayor of herefrom 1886 until his death in 1889. He had been elected to that position twice before and he had previously served as justice of the peace and selectman of herefrom 1876-1879. In 1907, Hereford established its own water system with a gravity system using wells drilled down to 350 feet below ground level; this system allowed for more efficient irrigation than earlier systems used an open well system
