In 1924, Texaco built an oil refinery here that still operates today as one of America's largest oil refineries; it ranks second behind only Unocal Corporation's West Texas Refinery in Houston (which has been closed since 2008). A number of small restaurants have sprung up around town over the years serving local cuisine including Grains & Beans (now open inside a mall), Pivo Latin American Cafe (now defunct), Joe's Pizza & Subs (closed Dec 2009), Buffalo Wings & Moresports Barbecue Joint (Closed Nov 2009) and Hi-Ho'dog BBQ (opened Mar 2009). Along with Amarillo and Vinton, Ennis is one of three municipalities in Midland County that were not part of the original U.S. settlement in 1847. The first white person to live in what is now Ennis was Tommy Grimes who built a cabin on a bluff overlooking the modern day downtown area in 1865. In 1887, A C H Wells Fargo opened its bank here and began collecting money for settlers west of the Arkansas River.
