In 1868, John Himmelbach founded what became known as "Himmelbach Brewery," which remains an Irish-owned brewery to this day. In 1886, George Wessel bought land adjacent to what is now Cedar Hill Road for $1,000. He dug a well and started brewing beer that he called "Wessel's." Wessel's Brewery continued operations until 1912 when it merged with German brewer Knoppers to form Anheuser Busch Brewing Company. Today, there are two breweries operating in Cedar Hill: Anheuser Busch Brewery (formerly Wessel's) and Bob Evans grill restaurants (formerly Burger King).
