In 1814, Colonel Amos Eaton founded Eaton's Mills on the west side of Center Brook Road northeast of present-day Westbury Village; this millinery and cloth industry remain located there to this day. In 1847, Jesse Latham purchased Allyn's Coffee House on Main Street from Nicholas Allyn for $3 per acre (2 acres = $ ). He built a frame cottage called Elmira Place near his mills for his wife and daughter-in-law to live while he worked in Albany; later he donated all his land within walking distance of Elmira Place to form what is now Central Park south of Interstate 87. In 1861–62 George Washington Carver moved to nearby White Plains with his family to become one of America's great agriculturalists. After moving back east in 1946, Carver began developing vast tracts of farmland that are now known as Central Park South and upper Manhattan along I-87 between White Plains Road and Broadway (now Morris Avenue). One year before Carver's death in 1942, he donated 1/4 mile north from where I-87 crosses Centre Avenue east to Uniondale Road an extensive tract which includes today's Upper Manhattan including much of Chelsea and Riverdale neighborhoods as well as most or all of Greenwich Village

Westbury is one of the five towns in Montgomery County that are part of the Buffalo-Niagara Falls Metropolitan Statistical Area. The first post office was established in 1811, and the name of the town changed from Newtown to Westbury on July 1, 1814. The first settler in what is now Westbury was George Washington White. On November 3rd, 1824, President James K. Polk delivered a speech at Clinton's Academy which included this sentence: "I have been asked if I am going to visit Westbury." After his inauguration as president on January 20th of that year, he traveled to Niagara Falls and then Buffalo where he surveyed land for his new presidential home on Lake Erie; however he never visited Westbury again until after his death on January 26th of 1849. In 1870s and 1880s many rich Americans moved into what became known as "the hill country" around Buffalo and Niagara Falls due to its fertile soil and numerous mineral resources including coal, copper, lead and zinc. By 1900 about 60% of all residents were self-employed farmers or ranchers with another 30% engaged in manufacturing or trade services such as plumbing or laundry work. Many small businesses also grew up during this time including a few grocery stores (started by Pemberton Brothers), blacksmith shops (owned by Johnstown Iron Works) and even an operating theatre (the only one in New York State). This period saw an increase in tuition rates for local colleges making it difficult for many people to send their children off to college while still working farm animals or taking care of family responsibilities
Westbury was first settled in 1785 by Loyalists from New York. The area now known as Westbury was part of the Mohawk Valley and First Nations territory. In 1791, British soldiers burned down the home of Chief Justice John Jay for refusing to sign aDeclaration of Independence. The town grew rapidly due to its location on a major route between New York City and Albany. By 1807, Westbury had a population of 4,500 people and was considered one of the most prosperous towns in New York County. In 1814, Captain George Washington Crossen's supply train stopped at Westbury while on his way to battle against Lord Cornwallis in Virginia. After crossing the Delaware River into Pennsylvania, Crossen's convoy encountered a force of approximately 20 Native Americans led by Chief Weemskiykiwahtoggin. The Native Americans opened fire on the Allied forces, killing four soldiers and wounding many more. This event is generally considered to be the start of World War II in America. During World War II, Westbury became an important manufacturing center for munitions production and served as both a military garrison and logistics base for American forces fighting in Europe. After war ended, it experienced rapid growth as businesses moved out and new residents arrived; by 1970, Westbury had reached its current population size of over 10,000 people. The town continued to grow through the years until it reached its current level of development around 2000 when it experienced serious economic decline due to changes in local demographics and infrastructure investments made by neighboring communities that replaced much older homes with newer buildings
