By 1860, there were at least three businesses producing knives in Woodbury – Bushnell, De Forest, and Waite & Sons. By 1870, there were six businesses producing knives in town with Waite & Sons being especially prominent due to their production of damascus steel blades. In 1875, Waite & Sons produced their first automatic knife which quickly became a standard product among knife enthusiasts. During the early 1900s, knife manufacturing reverted back to hand-to-hand combat activities as swords began becoming more popular. However, hand-held knifes continued to be manufactured until around 1930 when they all but disappeared from society altogether due to prohibition laws. Only a few small companies remain today that produce quality knives such as O’Neill’s Knife Company and Southwick Knives Incorporated – both based in Easton Township – but these companies have been steadily growing in popularity over the past few decades thanks to their innovative products and passionate customers.

In 1814, Joseph Dodge established a gristmill on the east side of town and named it after his late father-in-law Samuel Dodge. The first post office was established in1815 and remained open until 1870. The community grew rapidly due to its location at the junction of two major roadways - Route 9W (now Interstate 78) and Route 9N (now Interstate 95). By 1872, the village had a population of 1,200 people. That year, Woodbury incorporated as a borough and quickly emerged as one of New Jersey's most populous towns by 1900. During World War II, Woodbury became an important manufacturing center for munitions production due to its proximity to ammunition plants operated by Westinghouse Electric Corporation and other companies located in nearby Rahway and Elizabethtown. However, since these factories were closed during the war years there has been little recent development around them aside from some new housing developments which were built during the 1990s when many factories reopened after being idle for several decades or more.
