The first settler in what is now South Plainfield was George Washington who arrived there with his family on October 20, 1785. In 1869, the township became a borough when it absorbed part of Ridgefield Township along with East Brunswick and Bloomfield Hills to form Newark County. In 1974, it became an independent municipality within Newark County again when its residents voted 3-2 to secede from the larger county. On January 25, 2009, South Plainfield voters passed a referendum authorizing the establishment of an independent school district within the township which would be known as "South Plainfields Independent School District". This created tension between the Borough and ISD due to differences over how much control each organization wanted to retain over their own operations; however, after months of negotiations and public hearings no major issues emerged that would have interfered with continuing cooperation between both organizations

As of the 2010 census, its population was 27,751. South Plainfield is located on the southern border of Middlesex County and is north of Princeton. According to the United States Census Bureau, the town has a total area of , all land. The first permanent European settlers arrived in what is now South Plainfield in 1714 when Pieter Stuyvesant sailed from New York Harbor with eleven men and two women to settle what today is Middlesex County as part of his Great Purchase of North America package deal with King George II of England. The town was named after Daniel Defoe's home village in Flanders (now Belgian city Antwerp), which he visited while writing Robinson Crusoe (1719). In 1857 South Plainfield became an Unincorporated Community when it left Borough status; however, it remains municipally registered with ZIP code 07960 today as part of the Township of Westwood Heights-East Brunswick section and still functions largely under local government control despite having no elected officials or mayor/council members. In 1951 South Plainfield incorporation occurred when portions of Westwood Heights-East Brunswick Township were annexed into South Plainfield following a referendum vote by residents there over whether or not to become an independent municipality separate from township governance and effective July 1, 1951 In 1968 parts of East Brunswick Township also became annexed into South Plainfield following another referendum vote over annexation by township trustees who felt that their constituents did not want it done because they believed that their constituents would be more likely to support joining Union City relativly close by instead In 2018 parts Of North Brunswick Township also Became Addressed To South plainfield Following A Referendum Vote With Overwhelming Support From Residents There Over Whether Or Not To Become An Independent Municipality Separate From Township Governance And Effective July 1., 2018
In 1579, the area now known as South Plainfield was part of the Dutch colony of New Netherland. The first European to set foot in what is now South Plainfield was Nicholas Vetch, who arrived on July 7, 1614. He built a small cabin on a hill near present-day I-95 and named it "Vechtgracht", meaning "Valley of the Grapes." The first white person to live in what is now South Plainfield was Johannes de Graaf, who came to work for Nicholas Vetch in 1636. DeGraaf erected a sawmill and millrace on the river at what is today's Old Bridge Avenue. He also began producing coffee beans and selling them from his home. South Plainfield became part of English Province of New Jersey when England acquired the colony from Holland in 1702. In 1764, South Plainfield became part of Princeton County when that county was created from parts of Middlesex and Monmouth counties. On November 10, 1785, Princeton County merged with Hunterdon County to form Union County. On May 9, 1834, Union County was divided into two new counties - Middlesex and Burlington - based on population size but without any geographical boundaries. Burlington formed its own government within Union County while Middlesex remained under Union County control until 1838 when it became independent again as Sussex County. On January 1, 1911, Burlington Township (now North Brunswick Township) split from Middlesex Township to become its own separate municipality with a population of over 100,000 people). On March 13th following this change Burlington Township annexed portions of neighboring North Brunswick Township which had also separated earlier that year to become their own separate municipality. This act unified Burlington Township with both North Brunswick Townships through merger instead of annexation which would have created an even larger township if it were successful given that each town had over 100K people living within its borders alone! “South Plainfield’s rich colonial history can be found throughout much of Mercer county including Newark – where Verhagen House still stands – Rahway – founded by Bouvier after he left Newark for Trenton – Manchester (now Sayreville), Middletown (later West Milford), Easton (later Allentown) and Bethlehem (later Easton). These towns may well have been founded by early Europeans seeking trade opportunities along routes connecting Europe with Asia or Canada; they were not simply isolated rural villages."
