Eunice, Louisiana is a town in Lafourche Parish, Louisiana, United States. The population was 1,521 at the 2010 census. The name "Eunice" comes from English and French. Eunice is one of two towns in Lafourche Parish that still use the original 1837 plat map as their town seal. The first residents of what would become Eunice were three families from New Orleans who came to the area in 1837 to prospect for oil. They named their new settlement after General Lafayette's sister-in-law Madame de Staël, who had been born in Étampes, France but died near Baton Rouge when her parents took her to live with them and raise her children there. When Lafayette visited the area in 1840 while on his trip through central Louisiana he called it "La Nouvelle-Orléans". The Town of Eunice was incorporated on December 21, 1881 by order of the Louisiana Legislature following passage of a bill establishing municipal government therein within earlier limits set by an act passed on November 14th, 1880. At its incorporation ceremony Mayor Jules German (D) read from a prepared speech entitled "An Act To Charter and Incorporate This Township Of LaFouquière And All That Connects It." The motto adopted for the township was "In hoc signo vinces" or In this way you will victory have won. During World War II many people worked at various munitions plants located within Lafourche Parish including those established at Leduc and Midway Air Force Base; all during which time they would often meet outside of school hours to discuss their work or fellowship together known as " WORKTIME." A plaque honoring these workers has been placed inside Veterans Memorial Park adjacent to Midway AFB south gate.
Eunice was founded in 1872 by General James Longstreet and his wife, Julia. It was named for Eunice, the daughter of a Confederate general. The town grew rapidly after it became a stop on the Union Pacific Railroad. In 1907, Eunice had a population of 17,000. The commercial center of the town was built around the railroad depot. In 1939, when World War II began, Eunice became an important military base because it had a large arsenal and two hospitals. Much of the production at the arsenal went to support American troops in Europe. After the war ended, many factories closed down and Eunice lost its status as a commercial center. Today, there is little remaining evidence of Eunice's past except for some abandoned buildings and several small businesses.
