Eunice is a small town in the parish of St. Bernard, Louisiana, United States. The population was 6,521 at the 2010 census. Eunice is known for its sugar cane plantations and the Missoula Trail Railroad which connected it to the nearby city of Vicksburg during its heyday in the 1840s. Eunice was founded by French colonists in 1718 as " La Courcelle." It became part of Spanish Louisiana in 1803 and then American Louisiana in 1860. In 1830, Eunice became an incorporated village under the name "St. Bernard." The first post office opened at Eunice on March 12, 1830. At least one family from Eunice operated a flour mill until 1892 when that business was taken over by a local farmer who also owned a sawmill and gristmill. In 1845, Captain John Davenport organized the First Company of Independent Men volunteers for Illinois Territory west of Missouri River (later Kansas). He named his unit "The Missouri Volunteers" after General James Kavanagh's forces that had fought against Mexico at Palo Alto on October 16, 1846 (the day before Mexico's independence from Spain). Davenport sailed downriver from New Orleans on December 19 with his force to join General John Fetterman's army besieging Fort Sumter in South Carolina; he reached Baton Rouge December 26 and helped lead an abortive assault against Fort Jackson January 2–3 that failed because Confederate reinforcements arrived too soon.
