A store called “The Arsenal” was established on the present day corner of Third and Main Streets in 1814, which became one of the largest ammunition retailers in the area. In 1868, Captain John Sibley founded a company that manufactured rifle rounds out of black powder. This company became known as Sibley & Sons Ammunition Company. In 1898, Captain John Sibley died and his son took over his business. At this time, Captain John Sibley had three sons – Sam (1898-1974), Bill (1901-1990) and Tom (1902-1987). All three sonsjoined their father at his death in 1974 to continue operations of the company until it closed its doors in 1990. The community was founded in 1881 by General James W. Egan on land bordered by the present-day towns of Thibodaux and Gretna. It was named after nearby Elysium Springs, which had been renamed Eunice in 1865 by General John C. Frémont for his wife Emma. Eunice became an incorporated Village on November 2, 1901,[2] under the name "Thibodaux". On July 1, 1907, it annexe d'Iberia Parish to form its current boundaries.[3] The community has experienced several natural disasters including Katrina and Rita which destroyed most of its homes and businesses. In recent years it has also seen growth in the number of residents working in Baton Rouge or New Orleans metropolitan areas; however many residents still maintain close ties to their homes here. Today, Eunice is known for its annual festival (Equinox) which features music, arts & crafts activities and food trucks from various parts of Louisiana

The town's economy has been based largely on agriculture since its establishment. The local produce includes cotton, corn, soybeans, tomatoes and other vegetables; oilseed production includes cottonseed and canola oil; livestock includes pigs, cows and horses; and fishing helps support the town's annual summer festival which draws some 50,000 people to the area each year

The city's name comes from a French word meaning "sweet valley." The Assumption Parish seat was located in Eunice until 1875 when it moved to New Iberia.
