In 1855, Baker became an independent Village and later a Parish seat. The first Baptist church was built in 1865; it still operates today as the First Baptist Church of Baker Parish. Baker's cotton gin (now known as the Baker Cotton Mill) opened in 1868 and became one of the largest cotton gins in Louisiana. The mill closed its doors in 1960 but remains preserved as a museum within Ville Platte Parish proper. In 1906, Jarrell Ladd purchased 5,000 acres (20 km²) northwest of Baker and began to develop what would become Jelly Belly Land Company which included several thousand acres (80 km²) of rolling land that forms what is now Baton Rouge metropolitan area and parts of New Orleans metropolitan area and other areas across central Louisiana since 1916[2][3]. The company ceased operations circa 1945 when Hurricane Katrina destroyed most or all its facilities including much important evidence from their earlier development - this included major portions of Lake Pontchartrain east of New Orleans[4][5] affecting 3% – 5%of Baton Rouge's population according to 2010 Census figures with over half that affected directly by flooding resultant from Katrina.[6] reopened for business about 3 years following rehabilitation before being taken off line again due to lack funding for continued upkeep after many years OFF LINE! currently undergoing restoration/maintenance once again

Baker was founded in 1836 by John Baker and his wife Elisabeth. The name of the town derived from the history of a local Indian chief, who had been known as the "Great Baker." The town grew rapidly and by 1872 it had a population of 1,000. In 1898, Baker became a parish within Grand Isle Parish. It was during this time that the parish office building was erected on First Street. The present structure, which is a two-story red brick building with limestone trim and an arched doorway, was built in 1907. In 1925, Baker became one of twenty parishes within New Orleans Parish. It wasn't until 1959 that it became part of Jefferson Parish. As part of this move, all but one of the original churches in Baker were destroyed or converted to secular uses. Today only the old Baptist Church remains standing in town. The economy of Baker has changed little over the years; however, there have been some notable events associated with its history: -In 1902 John Rector purchased land east of downtown for what would become Stuyvesant High School; -In 1924 businessman Harry Wright donated land near Interstate 10 for what would be Louisiana State University's main campus; -In 1957 Hurricane Betsy struck southern Louisiana and damage to much property led to the development of levees intended to protect against future storms; -Baker also played an important role in helping launch New Orleans' music scene when many people living there first started playing instruments as children
