Baker, Louisiana is a small town in the parish of Jackson in the state of Louisiana. The population was 1,898 at the 2010 census. It is known for its apple orchards and Bourbonnaise sauce. The history of Baker begins with John Baking Company, founded by John Dickson Baird in 1892. The company manufactured baking powder, cookies, pies and other snacks for local stores and sold them directly to consumers. In 1915, Baird's son-in-law Don Beaumont took over ownership of the company after his father's death. Beaumont later became president and CEO of PepsiCo USA before dying in 2006. He is also buried at Arlington National Cemetery in Arlington County, Virginia. In 1924, Harry Jorgensen opened Jorgensen's Grocery Store on High Street across from the high school which he had built himself using parts from his family's grocery business that they had taken over three years earlier. The store soon became known as "The First" because it was the first grocery store east of Texas to open its doors with self-service refrigeration on a large scale. In 1951/1952 when Interstate 10 was constructed through central Louisiana (and much of present day Mississippi), Jorgensen relocated his store to what is now I-10 eastbound Exit 249 south of Baton Rouge and I-10 westbound Exit 253 north of Lafayette; this allowed him to serve customers from both ends of the interstate without having to go through Baton Rouge or Lafayette.

Baker is a town in Ascension Parish, Louisiana, United States. The population was 1,282 at the 2010 census. It is part of the Baton Rouge Metropolitan Statistical Area. The first settler in Baker was John Brown who arrived in 1811. He set up a cabin on an island in the Assumption River and named it "New Providence." In 1814, Baker's first post office was established with Isaac Newton as its first clerk. In 1830, George Washington Dixon settled in the town and named it after himself. In 1832, Elisha Holmes bought land east of Baker for $10 per acre and built a house which he called "Holmes House." He also opened a store and tavern called the "Old Tavern" to serve travelers passing through his area on their way to or from other parts of Louisiana. On July 14, 1835, Captain Powell Jett assigned Laban French to lead Company K of militia against Indian scouts at what is now known as Battle Mountain near present-day Baton Rouge. French led his men into battle but were quickly routed by chief Tecumseh's forces under Black Hawk pontoon bridge over the Assumption River. At least 35 soldiers died and more than 60 were wounded in what became known asaminable defeat for Captain Jett's unit at Battle Mountain campaign. This event helped spur development along portions of Highway 9 near where Frenchman's fight took place; these areas are now known as Frenchman's Alley and Battle Mountain Road
