By 1900, Los Banos contained over 100 businesses and had a population of 1,200 people. The town's growth continued through World War II until it peaked with its population of 3,500 during the war's heyday. However, as economic activity turned towards agriculture instead of industry, Los Banos declined in popularity over time and reached a low point with its population of 627 in 2000. However, since then it has undergone several revitalization efforts led by Mayor Steve Prendergast and City Manager Darrell Burger that have seen rebirth for both the town and its economy. It also became one of the most important agricultural centers in California due to its production of potatoes, hay, cottonseed oil, appleseed cake (a type of bread), almonds (which were originally grown in nearby Moriarty), grapes (from Concord grapes that were brought downriver from Suisun Bay), and other crops. During World War II Los Banos was one of the largest military installations in California because it played an important role in the war effort as both a munitions plant and base for aircraft operations. After the war ended, Los Banos experienced rapid growth as many new residents moved into the city to take advantage of new opportunities created by large industry and housing developments such as Interstate 680 which crossed through downtown Los Banos.
