Lake Forest, California is home to the oldest knife business in the United States. The first knife shop in Lake Forest opened its doors in 1868 and was run by an immigrant from China. It was here that a man named John Hafer started making traditional Chinese swords. In 1904, Hafer merged with his brother-in-law, George Eastman, and began to produce high quality knives made of stainless steel and bone. Today, George Eastman knives are still produced here in small batches by one family. The history of the knife industry in Lake Forest is intertwined with that of the city itself. The city was founded on August 12th, 1871 by two men – Samuel Francis Eaton and Augustus Kelley – who were looking for a place to raise their families. Their idea was to create a community where people could live close together and work together towards common goals. They named the city after themselves – Emanuel (Eaton) Park & Lake Forest would be its public square.
