Agricultural products include hay, corn, cottonseed oil, watermelon seedlings/pods, cheese (gouda, cheddar), eggs (hemp milk), potatoes etc. Ranching includes cattle raising (beef cattle, pork), horseback riding ( broncos) and muzzleloader shooting (buffalo). There are also several family-owned businesses in the town such as two hair salons/spas/, two gourmet cafes/, two bookstores/, four gas stations/, one health club/. In 1850, after Mexican independence was achieved, General Antonio López de Santa Anna ordered all gold mines in California closed because he believed that Mexicans were taking control of the land. This led to many people coming into what is now Highland with new ideas about what they could find there. Some began farming while others founded businesses such as carting goods for settlers on horseback across central Arizona and south Nevada. There were also many men who fought in American Civil War for their country including Major General James Shields who had his home at Springerville in Highland until 1865 when he moved upriver to Fort Worth because war service there conflicted with his job as a surveyor for the Northern Pacific Railroad Company In 1871, some miners discovered substantial amounts of silver at Sulfur Hill which made mining opportunities available in this area again although most continued operations out of town due to high costs associated with silver production. By 1902 more than two-thirds of residents were self-employed farmers or ranch hands with only 5 percent employed within urban areas outside agriculture or services provided by professional contractors like engineers and architects. Most families still resided on small parcels near their homes or fields where they farmed until recently using traditional water wheels powered by hand pumps connected directlyto local wells providing irrigation throughout much of their range year round without any need for open air summer kitchens like we enjoy today! The first post office opened here on December 12th 1880 under mail delivery from Carson City (now Las Vegas) but no mail reached Highland until 1881 because roads were not built then and communication between towns was difficult on account of lack of bridges or other means of transportation across ridges then also known as mountains). In 1846, the Gold Rush began in California and soon became a major industry. The most important gold rush town was Sacramento, but many other towns also sprang up during the boom time. Highland was one of these towns. The town was originally founded by Scots-Irish immigrants who had come to California in the 1850s looking for a new home. They left behind a small community of about 100 people and started a new one near what is now Sacramento. The name Highlands was chosen because of the high hills that surrounded it. During the next few decades, Highland grew rapidly thanks to its importance as a mining center and its location on the San Joaquin River. By 1860, it had a population of around 1,500 people and had begun to build roads and businesses downtown. In 1881, however, things took an unexpected turn when silver discoveries were made at nearby Mill Valley. This led to an economic slump in Highland due to competition from mills built at more recent times in nearby cities like Stockton and Fresno. However, local residents still managed to make some money selling goods produced by their land or leasing out space in local businesses. Despite this difficult time, however, some key members of the community kept fighting for their rights and continued growing into the 20th century as part of what is now known as Highland’s history
