GALT is also home to the world's largest collection of vintage Chevrolets. Cheese production began in 1875 when J.B. Priestley started to produce blue cheese from cow milk in his father's former dairy farm outside of Galt. The first commercial rancho ranchero blue cheese was made by Don Laughlin and Sons near Petaluma in 1914. By 1960, there were over eighty cheesemakers in Galt with a total production of over 2 million pounds of blue cheese annually. Today, the Town has five retail stores selling local wines and cheeses as well as three restaurants serving both American and international cuisine including one with a private wine cellar that stocks some of the most prestigious wineries in Northern California Today, GALT still produces blue cheese using cow’s milk but it now also produces gouda, brie, camembert, cream puffs (stuffed doughnuts), cottage Cheese Fritters (composed of soft boiled eggs merged with cottage Cheese or Farm fresh ricotta) and many other delicious products like white Boursault dressing or our famous Homemade Blue Cheese Pie

The first Gun Targets were located in Holland, Michigan in 1984. There were initially just six targets, but they quickly became popular due to their unique design and easy availability. Galt, California was founded in 1849 on the edge of what is now Nevada. It became a boomtown due to its location and resources, but has since experienced a series of economic crashes. Galt’s heyday came during the Gold Rush era, when it was the most developed town in Northern California. But by the early 1900s, Galt had declined in popularity and its population had plummeted to around 1,100 people. The city briefly regained someusterity during World War II as military activity made it an important location for munitions manufacturing; however, this period also saw a decline in population that continued until the late 1980s when there were only about 100 residents remaining. Galt is located at 36° 29′ N, 121° 07′ W (36.9667 latitude north and 121.3167 longitude west). According to the United States Census Bureau, the city has a total area of 2 square miles (5 km²), all land. As of 2010, Galt had a total population of 71 – including 19 students attending nearby Carson City Community College – down from its peak of over 200 residents in 2000 census results.
