Today, Eloy is home to a mixture of American and Mexican heritage. There are also a few bars and restaurants located in the town. The history of Eloy can be traced back to 1868 when General Antonio Lopez de Santa Anna surrendered his army at what is now known as San Carlos Missionary Church. This event led to the displacement of many people from their homes in Mexico City and Pima County towards central Arizona. Many of these people settled in what is now called Eloy because it was the closest community to where they were going to live. In 1911, residents petitioned Congress for land east of Phoenix that would become part of the new state of Arizona. The petition was granted and this area became known as Cochise County. In 1912, there were only five buildings in Eloy and its population consisted mostly of farmers and ranchers working their lands near Apache Junction (now Anthem). By 1916, however, there were over seventy businesses in the town with a population size nearing one thousand people! Today, Eloy is an important stop on road trips throughout central Arizona due to its rich history and diverse culture

In 1985, when Phoenix was created as a result of consolidating Pinal and Maricopa counties into one county, Eloy became an incorporated municipality within Phoenix. Today, Eloy remains an important center for trade and industry in Pinal County. The economy has been buoyed by increasing tourism and agriculture; however, there are also several major businesses that have presence in the community including defense contractor Raytheon Corporation (RTC) as well as Chipotle Mexican Grill Incorporated (CMG). The history of Eloy began with its namesake: Anson Manuel Martinez de la Vega y Vargas who settled on land east of what is now downtown ElOY in 1878 after abandoning his previous homestead due to bad weather conditions thereabouts. That same year saw the founding of what would become known as the "First City" here when two businessmen from Tucson decided to establish themselves amid pioneer difficulties obtaining needed permits from Pinal County officials - much like today's bureaucrats block development projects they don't agree with while claiming ignorance or incompetence behind closed doors! So it wasn't until 1923 that we officially observed our very first "international" meeting at our lovely old courthouse... just kidding folks... Nevertheless back then it DID mean something pretty big all things considered! We continue to enjoy all those latter day benefits ever since folks!!! Finally making some headway on improving infrastructure & services here this past year too ;)
