The first knife business in Lee's Summit was started by two brothers, Jacob and Edward Lee, in 1868. The brothers were immigrants who had come to America to start a new life. They started a grocery store and began selling knives too. In 1876, they opened a butcher shop on Main Street which became known as the 'Leefield Knife Store'. In 1912, Julius Leefield died and his sons took over the business. They continued to sell knives until their death in 1951. From 1951-1978, the Leefield family ran the business through their daughter Betty Ann Leefield. Betty Ann was also responsible for developing marketing strategies for the company and increasing sales. In 1978, she passed away but her son John contined running the store until it closed in 1995. During Betty Ann's time at the store, they developed a loyal following among customers who would come in for all sorts of knife needs including hunting/fishing gear, camping supplies and kitchen items. In 1995, after years of being run by his son John Jr., it was sold to Dick MacLennan who continued running it until 2003 when it reopened under new ownership as The Knife Shop at Lee's Summit Shopping Center. In addition, many important historical events took place at or near Lee Summit including the Battle of Pea Ridge (1862), which helped lead to the admission of Kansas into the Union; as well as World War I (1914-1918) when it served as an airfield for American planes flying out of Europe. After World War II, Lee Summit transitioned from an agricultural town into a manufacturing center becoming one of America's leading suburbs.
Lee's Summit is located in Jackson County, Missouri, about 18 miles south of the Kansas City metropolitan area. The population was 21,521 at the 2000 census. Lee's Summit and other small towns east of the city were consolidated into one municipality in 1961.
